Quick Easy Tostadas
1-2 Avocados
1 can of black beans
Whole Wheat Tortillas
Salsa
Lettuce (optional)
Shredded Cheese (optional)
Coconut Cooking Oil Spray

Set oven to broil. Line a cookie sheet with foil and spray lightly with cooking spray. Place tortillas on sheet and super lightly spray with cooking spray. Put cookie sheet in the oven for about two minutes or when edges get slightly browned. Then flip the tortillas and watch them carefully. After 1-1.5 minutes they should be done. Take them out and quickly move them to a plate, this way they will get crispier while they cool. Then mash up the avocado and spread on tortillas. Warm up the can of beans (undrained) on the stove and then drain them of liquid and add to the tostada. Add salsa, cheese, lettuce or any of your favorite toppings.
Tip: instead of sour cream use 0% plain greek yogurt. I promise it tastes the same!




Recipe: Cheddar Turkey Burger--adapted from Real Simple Magazine

1 1/4-1/2 pounds ground turkey (go for dark meat if possible)
2-4oz Extra Sharp Cheddar Cheese, grated
1/4-1/2 red onion, shredded with a small portion thinly sliced
1 Avocado 
Juice of 1/4 lime
Salt & Pepper
Whole Wheat Bun (optional)

Mix turkey, cheese, shredded onion, salt, and pepper in a mixing bowl well. Form into 3/4 pound burger patties, make a small dent in the middle of the pattie to compensate for the swelling during cooking. Mash up the avocado with salt and pepper (to taste) and lime juice. Grill the burgers, serve with avocado on top with sliced red onion.
